Executive Chef
Executive Chef Dominique Brialy’s career has been singularly-focused on culinary exploration and excellence, from his first memories growing up on a farm in the rural Loire Valley to his studies at the well-respected Hôtellerie L’Arlequin in Montmelian. Chef Dominique learned from some of the most diverse and challenging chefs in Provence which helped to propel him to the role of Sous Chef at the Restaurant du Gourmet at The Paris Hilton. Chef Dominique’s curiosity for American life eventually led him to the post of Executive Chef of the Saratoga Lake Bistro, where he not only was awarded the 2004 Albany Iron Chef, but where he met kindred spirits, Claire and Sandy Pogue. Since joining The Epicurean, Chef Dominique has been awarded culinary distinctions from Chaine des Rotisseurs and the International Culinary Federation, and continues to put his unique spin on French classics with the intention of delighting, and at times confounding, his guests.

Beginning in her mother’s kitchen south of Montreal, Claire Pogue’s culinary career has taken her from the kitchens of acclaimed New York City caterer Glorious Foods, to three of Vail, Colorado’s luxury resorts, The Inn at Cordierra, the Inn at Beaver Creek and Saddle Ridge at Beaver Creek. Claire’s vision for The Epicurean, which began with a cafe & bakery, 9 years ago at Sterup Square in Pittstown, New York, is to nurture a community of people with discriminating tastes who take pleasure in eating and drinking.
